Ingredients
Smoked Tuna in Azorean Tea with Sesame Seeds
- 500 grs /1lbs., 1.6 oz. Bonito
- 40 grs / 1.4 oz. Sesame seeds
- 300 grs / 10.6 oz. Herbal Salt
- 50 grs / 1.8 oz. Tea from the Azores
- 100 grs / 3.5 oz. Raw Rice
- 100 grs / 3.5 oz. Flour
Dried Figs and Pineapple Chutney
- 40 Dried Figs
- 150 grs / 5.3 oz. Onions
- 150 grs / Pineapple
- 100 /3.5 oz. Butter
- 200 ml / 7 oz. Lajido Wine (dry fortified wine)
- To taste Cider Vinegar
- To taste salt
- To taste Pepper
Preparation:
Smoked Tuna in Azorean Tea with Sesame Seeds:
Start by cleaning your tuna and cut in desired shapes. Cover tuna with salt and let stand for 10 minutes. Clean the salt tuna and blushing. On a board put the tea, rice and flour and bring the tuna to be smoked in this mixture for 10 minutes. Garnish with sesame seeds.
Dried Figs and Pineapple Chutney:
Start by marinating the figs in lajido by 3:0. Saute onions in butter and add the figs, pineapple into cubes and cook. Finally add the Apple Cider vinegar and season with salt and pepper.
